- 3 avocados, halved and pit removed
- 6 egg
- Salt and pepper
- Fresh chives or parsley, chopped
Baked eggs in avocado
Preheat the oven to 180°C. Scoop out a bit of the avocado with a spoon to make enough room for the egg. Place the avocados in a baking dish. If the avocado shell is too round, cut a small slice off to keep the avocado flat while baking. Crack an egg into a bowl and gently place in the pit hole of the avocado. Bake in oven for approx. 15 minutes. Season with salt and pepper and garnish with chives or parsley.
Tip: For a bolder and tangier taste, sprinkle some crumbled Castello® Danish Blue on top of the eggs.
