Beetroot patties

with Castello® Fetta Cubes

  • 1 x 430g pack Castello® Fetta Cubes in Brine, drained
  • 4 large beetroots (600 g), roughly grated
  • 2 onions, roughly grated
  • 3 eggs
  • 2 tbsp psyllium husk powder or 100-150 g plain flour
  • a handful fresh mint, chopped
  • 1 tsp salt
  • black pepper
  • butter for frying

Preparation

Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly. Add the psyllium husk (or flour) and mix again. Add salt, pepper, Castello® Fetta cheese and fresh mint and mix to combine. Heat a frying pan on medium heat and add a large dollop of butter. Use your hands to shape the beetroot patties. Fry the patties on each side for 5-10 min., depending on thickness, until golden and set.

These beetroot patties are a great vegetarian alternative to the meat in a burger. They tastes delicious and with the rich and earthy flavour and texture of the beetroot you won’t miss the beef!
