Pasta with sundried tomatoes, avo, prosciutto and Castello® Fetta Cubes

  • 2 x 100g packs of Castello® Fetta Cubes in Oil with Herbs and Garlic, reserve 3 tbsp of marinating oil
  • 20 g sundried tomatoes, chopped
  • 300 g tortiglioni pasta
  • 85 g prosciutto, cut into strips
  • 2 avocados, diced
  • 1 clove of garlic, minced
  • ½ red chili, finely chopped
  • Zest of ½ a lemon
  • 5 stalks of fresh thyme, leaves picked
  • 5 stalks of fresh oregano, leaves picked
  • Salt and pepper to taste 

Tip:
The richly flavoured marinated oil from the Fetta brings this dish together and creates a flavoursome herbal finish.

Preparation

Sundried tomatoes, Castello®  Fetta cheese with herbs and garlic, prosciutto and avocado. Nothing more is needed for this delicious pasta that can be enjoyed for lunch, a light dinner or a picnic.

Cook the pasta according to packet instructions. When cooked, drain and add to a bowl with the prosciutto, avocado, chili, sundried tomatoes and garlic. Add the Castello® Fetta Cubes and the marinating oil with herbs and garlic and gently toss together. Top the salad with the lemon zest and fresh herbs. Season with seasalt and black pepper to your taste.
