Pineapple & Mango Salad

with Castello® Fetta Cubes

  • 2 x 100g packs of Castello® Fetta Cubes in Oil with Herbs and Garlic 
  • 60 g macadamia nuts1 pineapple, cored and sliced1 mango, sliced
  • 1 red onion, diced
  • 1 lime, zest and juice
  • ½ red chilli, chopped
  • 1 clove of garlic, crushed
  • 2 cups chives, chopped
  • salt and pepper
Pineapple & Mango Salad

Preparation

Make salad the hero of your meal by using other ingredients than the traditional, tomato, lettuce and cucumber. This salad is packed with flavors from mango, grilled pineapple and chilli and it gets crunch from the nuts and creaminess from the Castello® Fetta cheese.

Roast the macadamia nuts in an oven at 180°C for 5 minutes.
Grill the pineapple slices shortly on each side and dice.
Bring in the Castello® Fetta Cubes and mix with the rest of the ingredients.Toss all ingredients together in a bowl, and season to taste with salt and pepper. 

Tip:

If you can't find macadamias, try substituting cashews.
