  • 100g walnuts
  • 250g honey
  • 1 pinch salt
  • 2 sprigs thyme
  • 1 Castello Creamy Blue

PREPARATION

Roast the walnuts in a frying pan as it helps to release the flavor. Add salt, thyme and honey. Let the honey warm through as this helps absorb the flavors of the nuts and thyme. After about 5 minutes, add the mixture to a bowl or jar to serve. 

You can of course vary the nuts to your liking, but walnuts have an acid and bitterness which goes exceptionally well with blue mold cheese.
