You're My Boy Blue

Featuring Castello Burger Blue

  • 4 x premium beef patties
  • 4 x Brioche Burger Buns
  • 1 packet of Castello® Burger Blue
  • 80g baby spinach
  • Good quality Quince paste
  • 1 brown onion
  • 200g Sliced Prosciutto
  • 1 packet of original water crackers
  • 200ml whole egg Aioli

Preparation

FOR THE AIOLI:

  • Place the water crackers in a blender or food processor and crush to a powder
  • Add the Aioli to the crackers and season to taste
  • Sit to the side

FOR THE JAM:

  • Slice the onion thinly and place in a saucepan on low heat with a little oil Cook stirring until lightly browned
  • Mix through the quince paste until it is combined and free of lumps
  • Sit to the side to cool

FOR THE BURGERS:

  • Preheat oven to 180°C
  • Place the prosciutto onto a lined baking tray and bake in an oven for 6-8 minutes until crisp
  • Season the burger patties with salt and pepper and a little oil and cook for 4-5 minutes each side on a hot BBQ or frypan or to your liking
  • Top each Pattie with one slice of Castello® Burger Blue and melt until slightly softened
  • Toast or warm the buns on a grill or in the oven
  • Remove patties from the BBQ or frypan and allow them to rest while you assemble the buns
  • Spread the jam (to your liking) onto the bottom of the burger buns, followed by baby spinach
  • Place the burger patties topped with Castello® Burger Blue and the crisp prosciutto, spread Aioli on each lid and top each burger
