Baked Chicken with a Cheese Centre, Wrapped in Bacon and Served with a Mushroom and Blue Sauce

Ingredients for 2 servings

2 skinless chicken breast fillets
4-6 rashers of streaky bacon or pancetta
1 pack Castello® Blue Cheese

50 g butter
150 g button or chestnut mushrooms
2-3 tbsp. single cream/ crème fraiche

Preparation

Preheat oven to 180ºC/375ºF

Make a slit in the side of each chicken breast and then enlarge it inside to form a ‘pocket’ in the chicken, repeat with second breast.

Stuff each pocket with approx. one quarter of the cheese. De rind the bacon and using a knife blade ‘stretch’ it slightly by running the blade up the rashers, then use 2-3 to wrap around each chicken breast. Place on as baking tray and bake for 20 minutes.

Meanwhile wipe and slice the mushrooms, gently sauté in the butter and when just cooked, stir in the remaining cheese and a little cream to give a good consistency. Serve with the chicken.
