Blue Cheese Puffs

Ingredients for 12 servings

1/4 cup (50 mL) butter 
1/2 cup (125 mL) water 
3 eggs, room temperature 
2/3 cup (160 mL) all purpose flour 
3/4 cup (175 mL) Castello® Blue Crumbled Cheese

Preheat oven to 400F (200C) 

Line a baking sheet with parchment paper. In a medium saucepan over medium heat melt butter with the water; bring to a boil. Add flour and stir continuously until the mixture pulls away from the pan. Beat in the eggs, one at a time, beating well after each addition. Remove from heat and stir in Blue Cheese. Make rounded teaspoonfuls of mixture and place on baking sheet approximately 2” apart. Alternatively spoon mixture into a pastry bag and pipe into 2” rounds. 

Bake until crisp and golden – approximately 20 – 25 minutes. Best served warm.
