Blue Cheese Spread with Merlot Aspic

Ingredients for 4 servings

2 tubs (142 g each) Castello® Crumbled Blue Cheese 
1/4 cup (50 mL) butter, softened 
1 tub (250 g) Tre Stelle® Mascarpone 
1 tbsp (15 mL) crushed black peppercorns 
1/2 cup (125 mL) chopped pecans, toasted 

Merlot Aspic 
2/3 cup (160 mL) Merlot wine 
1 tsp (5 mL) granulated sugar 
1 pouch unflavoured gelatin 

Blue Cheese Spread with Merlot Aspic


In a large bowl beat butter, Blue Cheese and Mascarpone with an electric mixer until well blended. Stir in peppercorns and toasted pecans. Pour mixture into a serving bowl leaving 1” from the top and place in refrigerator.
Meanwhile prepare the Merlot aspic. Place gelatin and 1/3 cup Merlot in a small bowl; stir and set aside. In a small saucepan add remaining 1/3 cup Merlot and sugar, bring to a gentle boil. Pour heated liquid into gelatin mixture and stir. Wait approximately 5 minutes for gelatin to cool and pour over Blue Cheese Spread. Allow to set in refrigerator until ready to use.
