Blue Cinnamon Swirls

Ingredients for 25 servings

Pastry
600 g all purpose flour
100 g golden caster sugar
pinch salt
3 sachets (21 g) easy blend yeast or 45 g fresh yeast
100 g unsalted butter
400 mL milk
2 eggs

Filling 
150 g Castello® Extra Creamy Blue Cheese

150 g Golden caster sugar
1½ tsp. Cinnamon
beaten egg to glaze

Blue Cinnamon Swirls

Preparation

  1. Preheat oven to 230⁰C 
  2. Mix together flour, sugar, salt and yeast. Melt butter and beat into eggs and milk and then stir into flour mixture. Combine well and knead until smooth. Form into a ball, cover and leave to rise for approx. 25 mins.
  3. Roll out dough on lightly floured surface to get a rectangle approx. 50x25cm.
  4. Cream together cheese, sugar and cinnamon and spread over dough surface.
  5. Roll up from longest side and cut into 2cm slices. Place in paper lined tin (33 x 24cm) and brush with beaten egg. Cover and allow to rise (15 mins approx.)
  6. Bake for 20 – 25 mins until risen and golden.
