Blue, Spinach and Walnut Pesto with pasta

Ingredients for 4 servings

200 g spinach
75 g walnuts
1 clove garlic
115 g ( approx.¾ pack) Castello® Blue Cheese

350 g pasta of your choice

Blue, Spinach and Walnut Pesto with pasta


Remove stalks from spinach and wash and drain well. Place in food processor or blender with the nuts and garlic and blitz to chop finely. Then add the cheese and continue blitzing until all ingredients combined.

Cook pasta as directed on pack, drain, return to pan and then stir in sufficient pesto to coat well, reheat gently for a couple of minutes then serve. Store any remaining pesto in the fridge.
