Carmelized Onion, Fig and Castello Borgonzola Pizza

Ingredients for 4-6 servings

3 tbsp 3 2 tbsp 8 1/3 cup 4 oz

1 prepared pizza crust or 1 frozen dough*

2 medium red onions, coarsely sliced

3 tbsp olive oil

3 sprigs of fresh thyme

2 tbsp red wine vinegar

Cracked black pepper

8 medium fresh figs, trimmed and cut into 6 wedges each

1/3 cup sliced pitted black olives

4 oz Castello Borgonzola cheese cut into thin slices

Sauté red onion in olive oil over medium high heat for 2-3 minutes until just soft. Reduce heat to medium and continue to cook onions until very soft, about 15 more minutes. Add fresh thyme leaves and vinegar. Reduce heat to low and simmer until moisture has evaporated, about 3-4 minutes. Remove from heat and cool.

Preheat oven to 450° F [225° C].

Brush prepared pizza crust with olive oil and place on baking sheet. Spread onion mixture evenly over top of dough. Arrange figs on top and sprinkle with black olives. Lay slices of Borgonzola on top of onions but do not cover figs. Cheese will not cover entire pizza, but should be spread evenly.

Bake for 15-18 minutes or until bottom is crisp and cheese is bubbly. Slice and serve as an appetizer.
