Carpaccio of Pear with Lacy Greens & Crumbled Blue

Dressing
¼ cup olive oil

1/8 cup sherry wine vinegar

Salt & pepper to taste

Salad
2 ripe pears

4 tablespoons fresh lemon juice

6 cups greens such as baby arugula, watercress, or baby romaine 1/2 cup candied walnut pieces 1 4-ounce container Castello® Crumbled Blue.

Carpaccio of Pear with Lacy Greens & Crumbled Blue

Preparation

Whisk the olive oil and vinegar together. Season with salt and pepper; set aside.

Using a mandolin, slice the pears lengthwise and place them in a shallow pan; coat with lemon juice.  Arrange the pear slices on a plate. Toss the salad greens with the dressing and arrange in a pile alongside the pear. Add a sprinkling of walnuts and blue cheese. Serve immediately.
