Castello® Blue Cheese and Bacon Spinach Dip

Ingredients for 1 serving

1 tbsp 15 mL olive oil

1 medium onion, chopped

4 cloves garlic, minced

1 bag 225 g fresh spinach, rinsed and roughly chopped

1tsp 5 mL chili pepper flakes

1/2 tsp 2 mL ground black pepper

1/2 tsp 2 mL salt

tub 500 mL sour cream

1 pkg 125 g Castello® Extra Creamy Blue Cheese

6 slices bacon, cooked and crumbled

Preparation

Preheat oven to 350ºF (180ºC). In a large skillet over medium heat, add olive oil and onions. Sauté onions until soft - approximately 5 minutes. Add garlic and continue to sauté for an additional minute. Raise heat to medium-high; add spinach and cook until wilted. Add remaining ingredients and gently stir to combine. Spoon into an oven-safe serving dish and bake for 15 minutes.
