Castello® Tickler Extra Mature Cheddar

3 organic oranges

10 cups of sherry

190ml of water

200g sugar

100g almonds

1 cinnamon rod

Preparation

Cut the oranges in thin slices and add them in a pot together with cinnamon, sherry and water. Boil for about half an hour and add sugar and almonds. Let it simmer for another half hour, put it in jars (over held with hot water) and close immediately. Serve the cooled marmalade with cheddar and crackers.
