Chilli Prawns with Blue Cheese

Ingredients for 2-4 servings

1 x 150g pack Castello® Danish Blue cheese
100 mL (4fl. oz.) milk
1/2 medium sized red onion, chopped
1 clove garlic, finely chopped
1 small red chilli, seeds removed & finely diced
Juice and rind of 1 lime
Olive oil
300 g raw peeled prawns
1 avocado
Fresh coriander for garnish if desired

Chilli Prawns with Blue Cheese


Using the olive oil, gently sauté the onion, garlic and chilli until just tender.

Add a little more oil and then the prawns and cook, stirring occasionally, until they have turned pink.

Finally add approximately half of the cheese (or more to suit taste), and season with lime zest and juice.

Serve with diced or sliced avocado and roughly chopped coriander leaves.
