Coleslaw Salad with Blue Cheese Dressing

Ingredients for 4-6 servings

½ Savoy cabbage, finely sliced
2 large carrots, grated
1 medium red onion, thinly sliced

Dressing : 
½ a pack of 125g Castello® Extra Creamy  Danish Blue cheese 
2 tbsp. mayonnaise
4-5 tbsp. whipping cream
Salt and pepper to taste

‘Final Flourish’: 
Half a medium carrot, grated
½ a pack of 125g Castello® Extra Creamy  Danish Blue cheese, crumbled
6-8 stalks fresh coriander or flat leaf parsley, roughly chopped

Coleslaw Salad with Blue Cheese Dressing

Preparation

Combine cabbage, carrot and onion in a large bowl.

For the dressing in a smaller bowl mix together the cheese and cream, then mix in the mayonnaise and season to taste.

Pour dressing over salad and combine well, then toss together the ‘final flourish’ ingredients and scatter over the salad.
