Fig and Blue Burger with Ranch Beef, Grilled Onions and Aioli

1/8 cup Castello Crumbled Blue
4 bacon slices, cooked and crumbled
3 fresh or dried figs, chopped
1 ¼ pounds ground beef
Salt and pepper to taste
4 buns, sliced in half
1 cup baby kale or red leaf lettuce
4 slices grilled red onions

Preparation

Prepare the grill or broiler to medium-high heat. In a small bowl, combine the gorgonzola and bacon with the figs, set aside.

Season the ground beef with salt and pepper and form into 4 patties.  Grill—time adhering to personal taste—approximately 4 minutes per side for medium rare.  Divide the cheese, bacon and fig mixture between the burgers and continue to grill at low heat until cheese melts.

Transfer the burgers to buns and top with kale and grilled onions. Serve immediately.
