Pizza with Blue Cheese, Spinach, Artichoke Hearts and Sun Dried Tomato Purée

Ingredients for 1 serving

1 ready made pizza base, thin and crispy style,

125g fresh spinach,

Sun dried tomato paste or tomato purée,

6-8 artichoke hearts from a jar of antipasto hearts in oil-drained

8-10 cherry or baby plum tomatoes-halved

125g Castello® Gorgonzola Cheese, crumbled

Preparation

Preheat oven to 200ºC/400ºF.

1. Place the spinach in a sieve, pour a little boiling water over spinach to just soften and allow to drain.

2. Spread pizza base with 2-3 tbsp. of sundried tomato paste, then top with the other ingredients.

3. Bake as directed on pack and serve hot. If desired, lightly blanch more spinach as directed above

and add to hot pizza on removal from oven.
