Quesadilla Layer

Ingredients for 4 servings

2 chicken breasts cut into strips
Little oil for frying
1 small onion – cut into strips
1 red & 1 yellow pepper cut into strips
1 packet or 2-3 tbsp. Fajita seasoning
1 pack Castello Traditional Blue Danish Cheese
Jalapeno peppers
4 wraps

To serve: salsa, guacamole, soured cream and lime wedges, small bunch fresh coriander – roughly chopped.

Quesadilla Layer


Heat the oil in a large frying or sauté pan stir fry the chicken for 5 minutes, then add the onions and peppers and continue cooking for a further 3-4 minutes, finally stir in the fajita seasoning and cook for a further 2-3 minutes.

Meanwhile preheat oven to 180º/350ºF/

Place one wrap onto a lined baking sheet and spread one third of the chicken and vegetable mixture over, scatter lightly with jalapeno peppers and one third of the cheese, crumbled.

Repeat with remaining wraps, filling, peppers and cheese until the top layer which is just a wrap.  Bake in oven for 15 – 20 minutes max

Scatter with fresh coriander and serve with salsa, guacamole and soured cream.
