Spinach Onion Soup with Castello® Blue Cheese

Ingredients for 1 serving

1/4 cup 60 mL unsalted butter

3 large onions, sliced

2 cloves garlic, minced

2 pkg 900 mL beef broth

1 tsp 5 mL Worcestershire sauce

1 pkg fresh baby spinach

4 slices French baguette, toasted

1 pkg 150 g Castello® Burger Blue Slices

Spinach Onion Soup with Castello® Blue Cheese

Preparation

In a medium saucepan over medium heat melt butter; add onions andsauté until onion softens – approximately 5 minutes. Add garlic and sauté for an additional minute. Add beef broth and Worcestershire sauce. Increase heat to high and bring to a boil. Add baby spinach and cook for an additional two minutes. Preheat oven to broil. Ladle soup carefully into heat-resistant bowls. Top with toasted baguette slice and top with a slice of Blue Cheese. Place under broiler until cheese begins to melt. Carefully remove from oven and serve .
