Spinach pesto with Castello Tickler Extra Mature Cheddar

  • 250 g fresh spinach
  • 50 g almonds
  • 50 gram Castello Tickler Extra Mature Cheddar
  • 1 clove of garlic
  • Olive oil
  • Lemon juice
  • Salt and pepper

 

Spinach pesto with Castello Tickler Extra Mature Cheddar

Preparation

Rinse the fresh spinach leaves and add to blender with almonds, garlic and Tickler Extra Mature Cheddar. Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto. Season with lemon juice and salt and pepper.
