The most powerful of the Castello® cheeses, our Danish Blue is a full-flavor, salty blue mold cheese. Castello® Danish Blue was developed to get the taste of sheep’s milk Roquefort in a cheese using cow’s milk. Production now occurs at only three dairies in Denmark.
Havarti was created in Denmark in the mid-1800s. Known for its subtle yellow color and very small irregular openings, this palate-pleasing cheese offers a mild, buttery taste and smooth, creamy texture that can be sliced, grilled or melted.
