Grilled Flatbread with Blue Cheese and Peaches

Ingredients for 4 servings
  • 2 tablespoons olive oil, divided
  • 3 regular pitas
  • 1 small peach, thinly sliced
  • 3/4 cup Castello® Traditional Danish Blue Cheese
  • 1 cup arugula
  • 1/4 cup walnuts, chopped
  • 1 tablespoon balsamic vinegar
Grilled Flatbread with Blue Cheese and Peaches


  1. Spread 1 tablespoon of olive oil on the fronts and backs of the pita bread. Place the pita bread on the grill top. Flip each pita after 2 to 3 minutes.
  2. Top each pita with a handful of arugula and sliced shallots.
  3. Crumble the blue cheese onto each of the pitas. Let pitas cook on low heat for 1 to 2 minutes or until the blue cheese starts to melt. 
  4. Remove from grill top. 
  5. Add walnuts and drizzle each pita with balsamic vinegar.
