Castello Aged Havarti is a delicious and versatile cheese. It is an excellent choice for an appetizer, simply crumbled out into smaller pieces, but it’s also ideal on a holiday cheese board with crunchy pickled nuts.
Pour balsamic vinegar into a saucepan and simmer until the liquid has reduced by about a half. Add lemon thyme, sugar and water to the reduced balsamic vinegar. Allow mixture to simmer until sugar has dissolved and it has a syrupy consistency.
Add nuts and simmer for 2 to 3 minutes. Remove the pickled nuts from the heat and store in a jam jar, or other sealed container.
