Avocado Carpaccio with Extra Mature Cheddar

  • 2 ripe avocados
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 2 1/2 ounces Castello Extra Mature Cheddar
  • Edible flowers 
  • Salt and pepper
Avocado Carpaccio with Extra Mature Cheddar

Preparation

Cut the avocado into fine slices and place on a serving platter. Drizzle a bit of lemon juice and olive oil onto the avocados. Add thin slices of red onion and season with salt and pepper, edible flowers and crumbles of Castello Extra Mature Cheddar.
