Baked Chicken with a Cheese Centre, Wrapped in Bacon and Served with a Mushroom and Blue Sauce

Ingredients for 2 servings

2 skinless chicken breast fillets


4-6 pieces of bacon or pancetta


1 pack Castello® Traditional Danish Blue cheese

4 tablespoons butter


2/3 cup button or chestnut mushrooms


2-3 tablespoons single cream/crème fraiche

Preparation

Make a slit in the side of each chicken breast and then enlarge it inside to form a ‘pocket’ in the chicken; repeat with second breast.

Stuff each pocket with approximately one quarter of the cheese. Cook the bacon and use 2-3 to wrap around each chicken breast.

Place on a baking tray and bake for 20 minutes.

Meanwhile, wipe and slice the mushrooms, gently sauté in the butter and when just cooked, stir in the remaining cheese and a little cream to give a good consistency.

Serve with the chicken.
