Bellini with Double Crème White & Marinated Peaches

Ingredients for 2 servings

Bellini

3/4 cup Prosecco

6 tablespoons peach puree

2 to 4 raspberries

 

Double Crème White & Marinated Peaches

1 piece Castello® Double Crème White                            

2 pieces sun-ripened peaches                                          

1/4 red onion, thinly sliced                                                         

20 mint leaves                                                           

1 tablespoon olive oil                                                                

A pinch sea salt                                                               

1 teaspoon chili flakes, optional    

Bellini with Double Crème White & Marinated Peaches

Preparation

Bellini

Pour the peach puree into 2 champagne glasses and carefully top with Prosecco. Add raspberries.

 

Double Crème White & Marinated Peaches

Remove peaches from pit, slice and toss with rest of the ingredients. Serve Double Crème White with marinated peaches and a Bellini.
