Bruschetta with Blue Brie and Balsamic Strawberries

Ingredients for 6-10 servings
  • 1 loaf of French or sourdough bread, sliced on a diagonal
  • 1 cup of strawberries, hulled and sliced
  • 1/2 teaspoon sugar
  • 1/2 cup good quality balsamic vinegar
  • Castello® Saga Blue Brie
Bruschetta with Blue Brie and Balsamic Strawberries

Preparation

  1. Toss the sliced berries with the sugar and set aside.
  2. In a small saucepan, bring the balsamic vinegar to a simmer and cook until reduced by about half.
  3. Pre-heat broiler, then place bread slices on baking sheet.
  4. Broil until golden brown, about 2 minutes on each side.
  5. While the bread is still hot, spread with Castello® Saga Blue Brie and add the berries.
  6. Drizzle with the balsamic reduction.
