Burger Blue Sliders with Red Onion-Strawberry Relish

Ingredients for 6-7 servings

Red onion-strawberry relish:

3 tablespoons butter, unsalted

3 red onions, halved and sliced

1/3 cup sugar

1 1/2 tablespoons raspberry or red wine vinegar

3 1/3 tablespoons red wine

12 strawberries, chopped

Salt and pepper, to taste



1 1/2 pounds ground beef

1 teaspoon salt

1/2 teaspoon pepper

1 tablespoon fresh thyme, finely chopped

1 tablespoon butter, unsalted

1 tablespoon olive oil



Homemade aioli

Fresh arugula

Fresh strawberries

Burger Blue Sliders with Red Onion-Strawberry Relish



Melt the butter in a large, deep pan over medium heat. When the butter foams up, add the sliced red onions and simmer until tender and transparent. Combine the sugar with the vinegar and red wine. Add chopped strawberries and the sugar-vinegar mixture to the red onions. Turn up the heat and continue to cook until the liquid has reduced and evaporated. Season with salt and pepper.



Add salt, pepper and fresh thyme to the ground meat and mix well. Shape into sliders, approximately 1/4-pound each. Grill sliders for 2 minutes on each side.

Spread the homemade aioli on a slider or burger bun and top with fresh arugula. Top with Burger Blue. Serve with fries or a fresh summer salad.
