Burger Blue with Mustard Sauce and Roasted Onions

Ingredients for 4 servings

Mustard sauce:

1 cup sweet mustard

4 tablespoons acacia honey

3 1/3 tablespoons apple cider vinegar

2 tablespoons red chili, finely chopped

2 tablespoons ketchup

2 teaspoons Worcestershire sauce

1/2 tablespoon garlic powder

Ground black pepper, to taste


2 red onions, cut into thick slices

1 pound ground beef

Salt and ground pepper

4 burger buns

4 slices of Castello Burger Blue

Mustard sauce

4 green lettuce leaves

2 tomatoes, sliced

4 whole pickles


Fries or potato wedges

Fresh thyme for sprinkling

Burger Blue with Mustard Sauce and Roasted Onions


Combine all of the ingredients for the mustard sauce and refrigerate for a few of hours – preferably overnight.

Roast the onion slices until blackened on a very hot and dry pan. Divide into onion rings and set aside.

Form the meat into 4 patties and season with salt and pepper.

Heat the grill. Grill patties for about 3 minutes on each side – set aside to rest.

Slice the buns and warm or toast them on the grill. Place the cheese on the patties and spread the buns with mustard sauce, then top with lettuce, patties, roasted onion rings and tomatoes. Finish with the top bun and serve with pickles, fries with a sprinkle of thyme and extra mustard sauce.
