Castello® Aged Havarti, chipped into medium pieces

Castello® Traditional Danish Blue

Castello® Extra Mature Cheddar, cut into rustic chunks

1 recipe Sweet and Spicy Pumpkin Chutney

Pairings: Honeycomb, clementines, red apples

Assorted crackers and breadsticks

Sweet and Spicy Pumpkin Chutney

1 cup water

1 cup apple cider

2 tablespoons apple cider vinegar

1/2 teaspoon whole toasted coriander

1/2 teaspoon chili flakes

1 cinnamon stick

1 tablespoon granulated sugar

2 cups sugar pumpkin or butternut squash, peeled, seeded and diced small  

Kosher salt and freshly ground black pepper

1/4 cup golden raisins

Assemble the cheeses on a wooden board or tray. Serve with some of the pumpkin chutney and a piece of honeycomb. Fill in the spaces with some fresh or dried figs and your favorite crackers and breadsticks.

Sweet and Spicy Pumpkin Chutney

In a large pot, add water, apple cider, cider vinegar, coriander, chili flakes, cinnamon stick and sugar. Bring to a boil. Allow the liquid to reduce by half, about 5 minutes. Add the squash with a large pinch of salt and continue to cook at a simmer until the squash is tender, but not mushy, for 12 to 15 minutes. The liquid should be reduced and slightly glaze-like. Taste for seasoning, then fold in raisins. Cool and serve chilled or at room temperature.
