Castello®Herbs and Spices Havarti, sliced

Castello®Traditional Danish Blue

Castello®Double Crème White

Various artisanal hams, for serving

1 recipe Bacon Onion Jam, for serving

Assorted crackers, for serving

Grilled crostini, for serving

Bacon Onion Jam

1/2 pound bacon, diced

2 small yellow onions, sliced

3 cloves garlic, minced

2 sprigs thyme, leaves only

Salt and pepper to taste

1/4 cup apple cider vinegar

2 tablespoons brown sugar 

1 tablespoon mustard seeds

1/4 cup beer or water 

1 tablespoon extra virgin olive oil

Preparation

Cheese Board

Assemble the cheeses on opposing ends of a wooden board or slate. Lay out the hams along one side of the board. Place the jam on the board along with various crackers and breadsticks. Add some grilled crostini to fill in empty spaces.

Bacon Onion Jam

Render bacon until crispy in a large, nonreactive saucepan over medium heat for about 10 minutes. Remove from pan and set aside. 

Add onions to the bacon fat and cook over low heat with a pinch of salt for 8 to 10 minutes or until caramelized, stirring occasionally. When the onions are caramelized, pour off any excess fat.

Add the remaining ingredients to the pan and simmer until the liquid is reduced by two-thirds and looks “jam-like.” 

Remove from the heat and fold in crispy bacon. Cool to room temperature before serving. Refrigerate leftovers.
