Michael Symon's Aged Havarti Sweet-and-Savory Crostini

Ingredients for 6 servings

1 cup dried cherries
1/2 cup red wine
1/2 cup red wine vinegar
1/4 cup sugar
1/2 cup water
1 star anise
1 cinnamon stick
1 bay leaf
1 teaspoon ground black pepper
1 French baguette cut 1/2 inch thick and grilled
3 ounces sliced prosciutto
1 cup chunked Castello® Aged Havarti

For Havarti

Use a paring knife to cut up rustic chunks of Havarti.

For Dried Cherry Jam

1. In a nonreactive pan place the cherries, red wine, vinegar, sugar, water and spices and simmer for 30 minutes or until reduced by two-thirds; set aside.

2. Remove the star anise, cinnamon stick and bay leaf; discard.


Brush the bread with some extra virgin olive oil and grill over medium high heat for 2 minutes per side or until quite charred.

To assemble

1. Place grilled bread on a platter and top with slices of prosciutto.

2. Top liberally with jam.

3. Place chunks of the aged havarti on top of jam and serve.
