Michael Symon’s Gourmet Grilled Cheese with Castello® Creamy Havarti

Ingredients for 2 servings

GOURMET GRILLED CHEESE WITH CASTELLO® CREAMY HAVARTI
1 tablespoon unsalted butter
4 pieces challah or brioche, thick sliced
2 tablespoons Dijon mustard
4 thick slices Castello® Creamy Havarti Cheese
1 fresh pear, cored/seeded and sliced lengthwise
½ cup baby arugula

BABY MIXED GREEN SALAD WITH CASTELLO® CRUMBLED TRADITIONAL DANISH BLUE
1 cup baby arugula
1 cup baby gem or Bibb lettuce, torn into small pieces
½ cup radicchio lettuce, sliced thin
Kosher salt
Freshly ground black pepper
2 tablespoons sherry vinegar
1 teaspoon Dijon mustard
4 tablespoons olive oil
¼ cup toasted walnuts, roughly chopped
¼ cup Castello® Blue Cheese Crumbles
2 tablespoons dried cherries, roughly chopped

Michael Symon’s Gourmet Grilled Cheese with Castello® Creamy Havarti

Preparation

Place a large skillet over medium heat. While the pan is heating, lay out your four pieces of bread. Distribute the Dijon mustard equally on the bread, spreading it into a thin, even layer. Place a slice of Castello® Creamy Havarti Cheese on each piece of bread, topped with a few slices of pear on two of the pieces.

When the pan is hot, add the butter followed by all of the bread. Toast until golden brown and the cheese is melted. Divide the arugula equally between pieces of bread, placing it on top of the pear slices. Top with the other piece of bread.

Slice diagonally and serve with a side salad.

BABY MIXED GREEN SALAD
In a medium-sized mixing bowl, combine the arugula, baby Bibb and radicchio and set aside. In a smaller bowl, whisk together the sherry vinegar, Dijon mustard and olive oil.

Season with a pinch of salt and some freshly cracked black pepper. Pour over the greens and gently toss to coat all of the lettuce.

Divide onto two plates and top with the walnuts, Castello® Crumbled Traditional Danish Blue and dried cherries.
