Ingredients for 4-6 servings

Walnut Butter

Makes 1 cup

1 cup walnuts

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 tablespoon honey

3 tablespoons olive oil


Cheese Board

Castello® Aged Havarti, chipped in to medium sized pieces

Castello® Traditional Danish Blue

Castello® Double Crème White

1 recipe of walnut butter

Pairings: pomegranate, strawberries, dark chocolate, assorted crackers and baguette slices

Walnut Butter

Preheat oven to 375°F. Place the walnuts on a baking sheet and shake out into an even layer. Lightly toast in the oven for 5 minutes, then remove and cool.

In the bowl of a food processor, add walnuts, salt and cinnamon. Pulse until the mixture looks like wet crumbs. Add honey and olive oil, then puree until smooth, about 1 to 2 minutes. Store in an airtight container or Mason jar.


Cheese board

Assemble the cheeses on a wooden or slate board. Serve with walnut butter, dark chocolate strawberries, pomegranate, crackers and baguette slices.
