Pea Soup

Ingredients for 4 servings

2 tablespoons oil

2 shallots, finely chopped

1 3/4 cups peas

3 1/3 cups chicken stock

1 cup whipping cream

1 teaspoon dried thyme

1 lemon

3 1/2 ounces Castello Traditional Danish Blue

Pea Soup


Heat oil in a pot and add finely chopped shallots. Sauté shallots until transparent. Then, add chicken stock and thyme. Bring mixture to a boil and simmer for 5 minutes. Add the peas and simmer for another 5 minutes. 

Blend the soup in a blender or using a handheld blender until completely smooth. Add whipping cream and quickly heat through. 

Season to taste with salt, pepper and lemon.
