Prosciutto-wrapped grissini with cheddar and basil sauce

  • 10 grissini or bread sticks
  • 20 slices of prosciutto
  • Fresh basil
  • 1/2 cup olive oil
  • 2 anchovies
  • 2 cloves garlic
  • 1 tablespoon sherry vinegar
  • 2 1/2 ounces Castello Extra Mature Cheddar
Prosciutto-wrapped grissini with cheddar and basil sauce

Preparation

Wrap two slices of prosciutto around each breadstick and place in a plate or bowl. Blend basil, olive oil, anchovies, garlic and sherry vinegar together in a food processor or blender. Season with salt and pepper. Pour the sauce in the plate next to the wrapped grissini. Grate Castello Extra Mature Cheddar over the plate and serve.
