It’s time for al fresco dining, soaking up the sun and lovely picnics. Here are three delicious little dishes that are easy to pack along with a bottle of wine and high spirits. The goal is to make practical dishes that require minimal preparation when you arrive.
BRUSCHETTA WITH STRAWBERRIES AND CASTELLO DOUBLE CRÈME WHITE
This summery take on a bruschetta uses fresh strawberries and Castello Double Crème White. Strawberries are generally associated with sweet, but they also go very well with creamy white cheese. If you have some ham or tomatoes on-hand, bring these along, too, for a bruschetta buffet.
PIEROGIS WITH SALMON, SPINACH AND DOUBLE CRÈME BLUE
Baked pierogis make a lovely (and portable!) addition to a picnic. Substitute the smoked salmon with chicken or ham, if you don’t fancy fish, or make a vegetarian version with sautéed mushrooms and spinach.
COARSE SALAD TO-GO WITH EXTRA MATURE CHEDDAR
The salad adds crispy freshness to the picnic spread. Extra Mature Cheddar lends strong flavor and depth to the salad. Choose coarse veggies that can be transported in a container without being damaged. Herbs tend to wilt quickly once coated in dressing, so pack all of the ingredients separately and assemble at the picnic. This salad also works well as a packed lunch.
