Castello brought a taste of Denmark to Napa Valley this summer during the Savor the Summer Retreat.
Chef Michael Symon, along with five food bloggers (Molly Yeh, Josh Hager, Tieghan Gerard, Liren Baker and Ashley Marti) were along for the wonderful cheese and wine-filled weekend that included:
Cheese and wine tastings
Chef Symon shared tips on how to pair cheeses with a variety of ingredients and flavors. Crowd favorites included Creamy Havarti with spicy chorizo or bitter caper berries, and Double Crème Blue with sweet honeycomb or bitter espresso.
Wine tips were also shared, such as pairing creamier cheeses that coat your mouth, with more acidic wines that can cut through. Guests also learned there are many delicious wine and cheese pairings.
Family-style lunch in wine country
The table was set for a scenic lunch overlooking the rolling hills of northern California. Our blogger friends were treated to a delicious, cheese-filled meal featuring recipes from Michael Symon, including the showstopper Creamy Havarti Panna Cotta with Blueberries.
Cheese Board Making Workshop
The weekend culminated in a cheese board workshop led by Chef Symon, who shared advice for preparing cheese. Here are a few (create rustic crumbles from hard cheese like Aged Havarti, and place complementary ingredients next to each other, such as honeycomb and blue cheese).
