Avocado carpaccio with Extra Matured Cheddar

  • 2 ripe avocados
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 small red onion
  • 75 g Castello Extra Matured Cheddar
  • Nasturtium leaves and chive blossoms
  • Salt and pepper
Avocado carpaccio with Extra Matured Cheddar

Preparation

Cut the avocado into fine slices and place on a serving platter. Drizzle a bit of lemon juice and olive oil on to the avocadoes. Add thin slices of red onion and season with salt and pepper, nasturtium leaves, crumbles of Castello Extra Matured Cheddar and chive blossoms.
