Castello Matured Cheddar with avocado, dukkah, focaccia and sivri pepper

  • 1 packet of Castello Matured Cheddar
  • 4 slices of focaccia
  • 2 ripe avocados
  • 4 tbsp dukkah – e.g. from Mill & Mortar
  • 16 sivri peppers – pickled Turkish peppers
  • 80 g green olives
  • 12 slices of prosciutto
  • 4 tbsp haydari – a Turkish dip
  • 4 lemon wedges
Castello Matured Cheddar with avocado, dukkah, focaccia and sivri pepper

Preparation

Remove the cheese from the fridge half an hour before serving. Break the cheese into suitable portions. Slice the avocados and arrange the slices on the bread. Place the bread on four plates and sprinkle with dukkah. Distribute the sivri peppers, olives, haydari and slices of prosciutto on the plates. Serve with lemon wedges.
