Spinach pesto with Extra Matured Cheddar

  • 250 g fresh spinach
  • 50 g almonds
  • 50 gram Castello Extra Matured Cheddar
  • 1 clove of garlic
  • Olive oil
  • Lemon juice
  • Salt and pepper

 

Spinach pesto with Extra Matured Cheddar

Preparation

Rinse the fresh spinach leaves and add to blender with almonds, garlic and Extra Matured Cheddar. Pulse lightly to blend, and gradually add the olive oil to get a slightly chunky texture without puréeing the pesto. Season with lemon juice and salt and pepper.
