Sweet match: Cheese & elderflower

The garden is bursting with elderflowers in June and July and it’s almost impossible to resist the temptation to also enjoy these white delicate flowers on the summer table.

A summer classic is elderflower cordial, which is a perfect match with white mold cheese. 
The recipe for sweet onion compote with vanilla and elderflower served with white mold cheese is perfect as dessert when enjoying a summer night on the terrace.

If you are making your own elderflower cordial it is best to pick the flowers in sunny weather, that way the elderflowers are dry and in full bloom.

Tip: You can also add a bit more sugar and reduce your elderflower cordial a little extra to make into thick and delicious syrup – also served perfectly with a white mold cheese.

Cheese and sweet onion compote with vanilla and elderflower

4 servings


10g of butter
4 white onions in thin rings
½ a vanilla pod
3 tbsp. of sugar
½ dl concentrated elderflower cordial
1tsp finely grated lemon zest
2 tbsp. freshly squeezed lemon juice


Let the butter melt in a pan over high heat, but without browning. Fry the onions over a moderate heat while stirring for approx. 5 min – the onions should not take on color. Add vanilla seeds, sugar, elderflower cordial, lemon zest and juice. Let the onions cook at moderate heat while stirring for approx. 15 minutes or until the liquids have reduced.Season and let the onion compote cool down.

Arrange the cheese on plates with the onion compote and toasted baguettes.
