Italian, acidic, brined

Taleggio is a seawater-washed Italian cheese made from cow's milk. It has a mild, slightly acidic taste with grassy notes and a creamy, white interior. The rind is edible, as with most other cheeses of this type, but it can be a little gritty because of the painstaking brining process.
