Preparation

1. Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly. Add the psyllium husk (or flour) and mix again.

2. Add salt, pepper, Castello® Fetta cheese and fresh mint and mix to combine.

3. Heat a frying pan on medium heat and add a large dollop of butter. Use your hands to shape the beetroot patties.

4. Fry the patties on each side for 5-10 min., depending on thickness, until golden and set.
