Castello® Mellow Black
A unique blue vein cheese made with a blend of sheep and cow’s milk and specially selected strains of blue mould. It has a rich, piquant flavour with a subtle floral finish. The consistency is creamy and spreadable with some softer spots throughout.
PairingsFresh stone baked Italian bread, red grapes, black cherries, figs, red meat, full-bodied red wine. To get the full taste experience, we recommend taking Castello out of the fridge an hour before serving.
