Beetroot Patties

with Castello® Fetta Cubes

  • 430g Castello® Fetta Cubes in Brine, drained
  • 4 large beetroots (600g), roughly grated
  • 2 onions, roughly grated
  • 3 eggs
  • 2 tbsp psyllium husk powder or 100-150g plain flour
  • A handful fresh mint, chopped
  • 1 tsp salt
  • Black pepper
  • Butter for frying
Beetroot Patties


  1. Place the grated beetroot and onions in a bowl with the eggs and mix thoroughly
  2. Add the psyllium husk (or flour) and mix again
  3. Add the salt, pepper, Castello® Fetta cheese and fresh mint. Mix well to combine
  4. Heat a frying pan on medium heat and add a large dollop of butter
  5. Use your hands to shape the beetroot patties
  6. Fry the patties on each side for 5-10 minutes, depending on thickness, until golden and set
  7. These beetroot patties are a great vegetarian alternative to meat in a burger. They taste delicious and with the rich and earthy flavour of the beetroot you won’t even miss the meat!
