Blueberry Syrup

  • 200g blueberries
  • 4 sprigs lemon thyme
  • 3 cups water
  • 100g sugar
Blueberry Syrup


Boil the lemon thyme and blueberries in water for 10 minutes, at medium heat, without a lid. Add the sugar and keep boiling until you get big bubbles - this means that the syrup has thickened. 

Pour the syrup into a glass and serve with any cheese you like.

Tip: You can use any berries you like to make this syrup. For a bolder bite, try to make it with black currant, and pair it with blue mould cheeses like Castello® Creamy Blue, Castello® Mellow Black or Castello® Danish Blue
