Brown Butter Green Beans with Blue cheese

2-3 servings
  • 2kg green beans, washed & trimmed
  • 1/3 cup pine nuts, roasted
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons salted butter
  • 2 tablespoons dried cranberries
  • 60g of . Castello® Traditional Danish Blue Cheese, crumbled
  • Salt and black pepper, to taste
Brown Butter Green Beans with Blue cheese


  1. Wash and trim the green beans. Pat dry and set aside.
  2. In a pan, bring some water to boil. Add green beans and cook for 3 to 4 minutes. Remove from water and drain. Beans should be crispy, so do not over-boil them.
  3. In a pan, add unsalted butter. Let it melt and swirl around until it turns amber in color. This will take 5 to 6 minutes.
  4. Add the cooked beans. Sauté for a minute until it is well coated with butter.
  5. Add cranberries, roasted pine nuts, salt and pepper and mix.
  6. Transfer to serving plate and sprinkle crumbled blue cheese on top. Serve immediately.
